Run for the Cure Update

It was a brisk sunny morning for the Run for a Cure. Great turnout and success to the committee that puts this run together every year.

As for our team, we prepared by meeting once a week for a group run. Trained through the summer, even with, as we started to call it Thunderstorm Tuesday. It seems that if it were to rain it was on that day. We persevered and remained committed to our goals.

Most of the team are new to running that have made leaps and bounds in progress. You all should be very proud.

No Bake Protein Bars

A perfect snack to keep your insulin levels  steady, keep hunger at bay and fuel your body. Protein bars and bites have become a trend for their convenience and simplicity if you choose to make your own.
Today I'm sharing a no bake version, but it does require a quick stove top cook to blend the peanut butter, coconut oil, and honey. 

No Bake Protein Bars

Add dry ingredients to a large mixing bowl and whisk together.

  • 1 c of quinoa puffs or rice puffs
  • 1/3 c Superberries mix (cranberry, blueberry, cherry, pepta seeds)
  • 1c  oats
  • 1/2c Usana Vanilla Protein Powder
  • 1/2 tsp ground cinnamon
  • 1/3c flaked coconut
  • 2tbsp chia seeds

Over medium heat, add peanut butter, oil, and honey to a medium sauce pan. Stir until melted and blended. Remove from heat.
  • 3/4c (175ml) peanut butter 
  • 1/4c (60ml) honey
  • 1/4c (60ml) coconut oil



Pour over dry ingredients and stir blending together. Pour mixture into 8 inch glass baking dish and spread out evenly pat down gently, smooth with back of a spoon.

Place in fridge for 1 hour, then cut into 24 squares.

166 per bar, 10 g fat, (2g sat fat), 116mg sodium, 24g carbs (4g fibre), 8g protein
