Today I'm sharing a no bake version, but it does require a quick stove top cook to blend the peanut butter, coconut oil, and honey.
No Bake Protein Bars
Add dry ingredients to a large mixing bowl and whisk together.
- 1 c of quinoa puffs or rice puffs
- 1/3 c Superberries mix (cranberry, blueberry, cherry, pepta seeds)
- 1c oats
- 1/2c Usana Vanilla Protein Powder
- 1/2 tsp ground cinnamon
- 1/3c flaked coconut
- 2tbsp chia seeds
Over medium heat, add peanut butter, oil, and honey to a medium sauce pan. Stir until melted and blended. Remove from heat.
- 3/4c (175ml) peanut butter
- 1/4c (60ml) honey
- 1/4c (60ml) coconut oil
Pour over dry ingredients and stir blending together. Pour mixture into 8 inch glass baking dish and spread out evenly pat down gently, smooth with back of a spoon.
Place in fridge for 1 hour, then cut into 24 squares.
